Smoked Salmon and Avocado
Ready in: 10 minutes
8 slices CBC Seedless Rye Bread
1 peeled and pitted avocado
1 teaspoon lemon juice
4 thin slices onion
1/8 teaspoon salt
1/8 teaspoon pepper
1 package (6 ounces) smoked salmon lox
Chopped fresh dill
8 thin slices tomato
4 large leaves lettuce
In small bowl, mash avocado with lemon juice, salt and pepper.
For each sandwich, spread one-fourth of avocado mixture on one slice of bread.
Top with one slice of onion, one-fourth of salmon, dill, 2 slices of tomato, lettuce leaf and another slice of bread.
Serve immediately or wrap and refrigerate until ready to serve.
